So,
Noob question for the day....

Do the battens that fit inside the sail bend out of shape much/require regular replacement.

I have heard that there is a template that they can be compared against to check for any irregularities, just wondering if anyone had any need to replace them after inspection, and if it was common.

They don't need to be replaced, unless they are broken (snapped). The batten profiles (shape) are checked to the template at each permit inspection, and if they are out of shape, they can be 'bent' over yours / the inspectors knee to the correct shape.

Thought that straightening them may have been frowned upon, are they metal/aluminium?

They are made of aluminium, they are very easy too bend, but if they are very old they can snap if excessive bending force is applied!
