I assure you that we don't! There are hundreds of airstrips on hills where you take off downhill and land uphill. The wind does not even come into it.
Take up jogging and you'll soon shed the excess weight.
I agree with arielarts, wind gradient is a better way of thinking about the thing that affects every landing we do.
