In theory all that is required is to fill in CAA form CA1..APPLICATION FOR REGISTRATION OF AIRCRAFT
    OR CHANGE OF OWNERSHIP.
In practice, unless you have already obtained confirmation from the BMAA/LAA that it will comply, the CAA will then contact the relevant "authority" for confirmation that your aircraft will comply. or require details of how you propose to ensure that your aircraft complies.
Again in theory, assuming the aircraft meets the definition of a Microlight!! then all that is required is to remove the second seat belt... legally all seats must be fitted with seat belts.. thus no seat belt... not a seat.. BUT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

BMAA Technical Information leaflet TIL 45 Issue 4 SSDR Handbook (Updated) can be found here [link]
I think it answers your question, and perhaps some you might not have thought of

One of the gotchas that interests/worries me is the ability to turn your SSDR machine back into a two-seater. Depending on what you do with it while it is an SSDR machine this may not be possible. If you want to sell it later it will likely be worth more as a two seater and that means it must have a valid permit to fly.

The TIL that Joan links to says this:

The CAA will revoke the Permit to Fly for any two-seater converted into a single-seater. If the aeroplane
is subsequently converted back into a two-seater it will require a new Permit to Fly.
A new Permit to Fly can only be obtained by first contacting the BMAAto discuss their requirements for obtaining a new Permit to Fly.
For asupported type approvedMicrolight we might decide that the owner has to go to the type approval holder.
Be advised that there is no guarantee that obtaining a ne
w Permit to Fly will be possible.
To give yourself the best chance of obtaining a new Permit to Fly, the BMAA advises that you:
    o
Do not make changes to the aeroplane that cannot be reversed, or cannot be approved.
    o
Maintain the aircraft in accordance with the approved maintenance schedule(s), and use correct replacement parts
    o
Document all work carefully in the airframe and engine logbooks, and keep invoices for all replacement parts.
